Angelica refers to the genus of species with more than 60 members (garden angelica). They have sweetly edible stems. 

The essential oil used in perfumery is obtained from the roots. 

Scent Profile: Herbal note with a bracing but sweet feel like the herb itself, while the root is more pungent.
